Berenjena de Almagro

Berenjena de Almagro is an eggplant of the Solanum Melongena species, grown in the Province of Ciudad Real for centuries, ever since it was introduced to the area by the Arabs. Almagro eggplant is quite fleshy and comes in various shapes and different colors ranging from green to purple.


Berenjena de Almagro is traditionally cooked and fermented with vinegar, salt, garlic and paprika, after which it can be stored for a longer period of time.
