Beddo is an Italian cheese made from raw cow’s milk. It is produced in the Biella area in Piedmont. The cheese is characterized by its unusual visual appearance – it is shaped into a flat disk. Beddo typically matures from 8 to 15 days, when it is turned on wooden planks and covered with a layer of hay, although it can also be consumed immediately.
When young, the cheese is rindless, but as it ages, it develops a camisa – soft, slightly wrinkled, white or straw-colored rind. Its texture is compact and soft, the aromas are reminiscent of mountain herbs, while the flavors are rich, full, and intense.
