Baronerosso di capra

Baronerosso di capra is an Italian cheese hailing from the region of Veneto, where it's produced by La Casearia Carpenedo. The cheese is made from raw goat's milk and it's left to age for at least 5 months before consumption. During the maturation process, the wheels are washed in Barbera d'Asti wine and marc for a few weeks.


Underneath its washed rind, the texture is semi-hard, firm, and crumbly. The aromas are musty and fruity, reminiscent of sour cherries, while the flavors are full and sharp with a winey aftertaste. It's recommended to pair Baronerosso di capra with full-bodied reds such as Barbera and Piave.
