Ayibe

Ayibe or Ayib is an Ethiopian cheese characterized by its mild flavor and crumbly texture, similar to the Greek feta. The cheese is traditionally served as an accompaniment to various Ethiopian spicy dishes. Due to the fact that ayibe has little flavor, it is often combined with a variety of mild or hot spices.
