Amaro Sibilla | Local Herbal Liqueur From Pievebovigliana, Italy | TasteAtlas

Amaro Sibilla

Amaro Sibilla is a herbal liqueur flavored with various botanicals. The recipe is a closely guarded secret that includes herbs and roots collected at Sibillini Mountains and honey. The resulting amaro is dark, aromatic, and subtly bitter.

The aroma is reminiscent of herbs, nuts, coffee, and honey. On the palate, the liqueur is smooth and has a bittersweet character with coffee, dry fruit, spice, and honey nuances. Sibilla amaro hails from Marche, and it has a long tradition dating to 1868.

It is still produced with an ancient recipe that was perfected by Girolamo Varnelli. It is bottled at 34% ABV. Amaro Sibilla is a perfect digestif. It can be served neat or on the rocks, but it also works well mixed with soda.
