This type of Manchego is crafted exclusively from the raw milk of Manchega sheep, which are native to the La Mancha region. The "Viejo" variety is aged for 12 to 24 months, acquiring a firm, crumbly texture and a deep yellow color over time.


The aging process imparts a complex flavor profile to the cheese, marked by a sharp, salty taste with notes of nuttiness and a pronounced pepperiness, enhancing its richness and depth.
