Zerradoun salt is a variety of salt that is traditionally produced by local women from the Al Wifak cooperative in Zerradoun, a village located at the foothills of the Rif Mountains in northeastern Morocco. The salt comes from two natural sources of saline water in the village, where it has been harvested from 200-year-old salt pans according to age-old methods with only slight changes which have been introduced in recent years.
Beginning from mid-May, the salt is being extracted through a process of evaporation and drying in tanks or pans, which typically lasts up to a week. The salt crystals are primarily processed into crystalline salt that is characterized by good quality and excellent flavor.
