The Waterford Distillery sources different barley crops from 19 growers across the Southeast of Ireland to produce individual, single origin whiskies that are rooted in Irish terroir. Nestled between the Slieve Bloom Mountains and the Castlecomer Plateau of County Laois sits an early medieval fort that lends the town its name (An Dún Mór translates to the big fort).


This site is also home to John Tynan's barley fields on Dunmore farm, where Waterford sources grain for the Dunmore release. The whisky is aged in a variety of casks: 33% first fill US oak, 25% premium French oak, 24% Vin Doux Naturel (sweet fortified wines), and 18% virgin US oak.


The aromas are of malt, raisin, black peppercorn, and citrus fruit. With flavors of marzipan, green apple, and chocolate and a palate driven by spice all encompassed by a mouth-watering finish.
