This traditional Turkish coffee recipe is adapted from the gastronomy book Turkish Cuisine with Timeless Recipes. The coffee is prepared only with ground Turkish coffee, water, and sugar, and it's brewed until frothy. If desired, the sugar can be left out.
70 ml (1/4 cup + 2 tsp)
1 tsp ground Turkish coffee
1/2 tsp sugar
To make a single cup of Turkish coffee, measure the water with the cup used for serving (approximately 70 ml) and pour it into the coffee pot. Add 1 teaspoon of ground Turkish coffee and 1⁄2 teaspoon sugar and place over a low heat.
Stir over low heat until the coffee, water and sugar are totally combined.
Do not leave the coffee pot unattended, continue to heat over low heat for 2-3 minutes. When it rises immediately pour the first foam into the cup.
Return the coffee pot to the heat, bring it to the boil again and pour the remaining foamy coffee into the cup.
