"This is not a dish for the faint of heart, but if you like Bollito Misto you may also like this. It is hard to find even in Paris. If you enjoy chewy gelatinious food you will like this. It is not a complicated meal. It reminds me of the way people used to eat before all this fancy cooking came along. The closest thing I can approximate it to is Head Cheese. Which I also like :))"
