Introduction & history

Declared the cultural heritage of Venezuela, tequeños are a popular Venezuelan snack or appetizer, consisting of a strip of queso blanco, traditionally queso Llanero (a firm, salty white cheese), wrapped in a thin strip of dough. These delicious cheese sticks are deep-fried until golden brown and crispy on the outside, while the cheese inside becomes warm and slightly melted. Tequeños are often served with various dipping sauces, typically the Venezuelan version of guacamole, guasacaca, making them a versatile and beloved treat at parties, gatherings, and restaurants. Ideal for serving a party of six, this traditional tequeños recipe calls for simple, accessible ingredients, namely all-purpose flour, cold butter, a pinch of salt, an egg, water, llanero cheese—a staple in Venezuelan cuisine—and oil for frying. 

Ingredients

410g (14.5 oz) all-purpose flour

240g (8.5 oz) butter, cold & cubed

1 tsp salt

1 egg

120 ml (1/2 cup) water

500g (1.1 lbs) llanero cheese

1 L (4 cups) oil, for frying

Preparation

Step 1/9

Combine the flour, butter, and salt in a bowl. Use your fingers to work the butter into the flour until the mixture resembles coarse, damp sand.

Step 2/9

Gradually pour in the water, stirring until it forms a cohesive dough.

Step 3/9

Encase the dough in cling wrap and let it chill in the refrigerator for 1 hour.

Step 4/9

On a lightly floured surface, roll the dough out to a thickness of 2mm (1/8").

Step 5/9

Slice the dough into strips that are 3 cm (1 1/4") wide.

Step 6/9

Cut strips of llanero cheese to a width of 2 cm (3/4").

Step 7/9

Use the dough strips to encase the cheese. After wrapping, gently roll them on the counter to ensure the layers are sealed.

Heat the oil in a pan over medium heat until it reaches 180°C/350°F.

Carefully place the tequeños in the oil and fry them for 3-4 minutes or until golden brown.
