Tapioca

Tapioca is the starch that is extracted from the roots of the cassava plant, which is native to Brazil. Cultivation of the cassava plant has spread throughout the world, mainly Africa and South America, where it has become a staple food. The flavor of tapioca is neutral, and it has a strong gelling power, making it a precious thickening agent in numerous sweet and savory dishes.
