In the simplest version, fresh fruits and vegetables are grated coarsely, drizzled with lemon juice and seasoned with salt, pepper, olive oil, and sugar. Alternatively, the dressing can be made with mayonnaise and yogurt, or sour cream. The most popular varieties are surόwka z marchiewki i jabłka (with carrots and apples) and surόwka z białej kapusty (with white cabbage). There are numerous alternatives which include onion, celery, leeks, pears, radish, cucumbers, horseradish, beet and even sauerkraut. Although surόwka is referred to as a salad, it should not be confused with another group of Polish dishes — sałatki. The main difference is that surόwki are made with only raw fruit and vegetables, while sałatki can include cooked ingredients such as eggs, meat, and seafood.

500 g sauerkraut
2 sweet apples
2 carrots
1 onion
50 ml olive oil
150 ml apple or carrot juice (optional)
ground black pepper
1 tbsp sugar, honey or sweetener
Chop the sauerkraut into small pieces. If it is too dry, add apple or carrot juice.
Peel and grate the apples and carrots.
Cut the onion into cubes.
Place the vegetables into a salad bowl and season with olive oil, pepper, and sugar.
Mix well and serve.
