"Everyone's favorite dish in the Philippines, no joke. Filipinos will always swear by it or by theur favorite cook's version of it. Me personally I like it with pork boiled to tenderness, with the pork cut being a nice fatty pork belly so as to have the best of the bone, collagen, lean tender meat, and fat. That fat, that scrumptious, lovely fat.. it should be floating and melt-in-your-mouth tender..."

"Sinigang may be considered Filipino, but it can be made anywhere from available ingredients. To "sigang" is a process that can be made from shrimp, meat, fish, or vegetables. Even the souring ingredient can be tamarind, kamias, guava, tomatoes, etc. So you can be assured of the freshest soup wherever you are."
