"When I arrived in Finland in 2018, it became clear very quickly that Baltic herring is one of the dishes to try in Finland. I went to one restaurant, tried it and found it horrible, lol. However, I was sure that it was just the restaurant's fault and did further research. I researched what locals in Helsinki say about what the best place is to try it and it turned out to be restaurant Kosmos. And it was WOOOOOW. The fish outside was pleasantly crispy, while soft and mild inside melting in the mouth. It was beautifully paired with pickled and spiced cucumbers and beetroot accompanied by mashed potatoes. It was a wonderful culinary experience in a wonderful old and elegant restaurant in Helsinki"
