Sedano Bianco di Sperlonga is a celery produced within the territory of the Pantani area, which is located between the Fondi, S. Puoto and Lungo lakes and the Tyrrhenian Sea. Within the municipalities of Fondi and Sperlonga, in the Province of Latina, in the Lazio region.
The specificity of this celery is tied to the pedoclimatic characteristics of the area and the historical specialisation of local farmers, who have been able to adapt low impact environmental techniques and take advantage of marshlands, so as to preserve the Bianco di Sperlonga ecotype.
Celery was already known and appreciated for its therapeutic properties in 1000 B. C. Homer mentioned the use of celery as a medicinal herb in the Odyssey. Sedano Bianco di Sperlonga is pale green, with white or whitish ribbing and it is only slightly fibrous.
