Salmoriglio

Salmorglio is a traditional sauce originating from Sicily. It's made with a combination of olive oil, lemon juice, parsley, oregano, salt, and pepper. A dash of Tabasco or chopped garlic can also be added to the sauce for extra flavor. In order to prepare salmoriglio, the oil, lemon juice, oregano, and parsley are beaten together, then mixed with some hot water until the sauce becomes smooth.


It's seasoned with salt and pepper, then heated over hot water. Once it becomes very hot, the sauce is usually poured over slices of roast lamb, chicken, or veal, but it's also used with boiled fish (especially swordfish), seafood, and vegetables such as green beans and broccoli.
