Introduction & history

The French version of a shortbread cookie, sablé is characterized by a sandy texture because it's made with a dough rich in butter and egg yolks. It’s incredibly easy to prepare, and all one needs is flour, sugar, butter, egg or egg yolks, and a flavoring — vanilla is most commonly used, but so is lemon zest and cinnamon. The dough is either rolled out, and then circles are cut out and baked, or shaped as a log and cut into slices, then baked. The cookies are best fresh but will keep for up to a week. It’s best to pair them with a cup of tea or coffee.
