Rosé des Riceys is a French appellation located in Riceys commune that produces rosés from Pinot Noir. This designation is somewhat of an anomaly since it is located in the Aube department of the Champagne region, but it does not produce sparkling wines.
Riceys wines are usually produced in a process called saignée—in which grapes are left to soak together with the skins for several days, resulting in intensely-colored rosés that typically display notes of red fruit and dry herbs, while the flavor is delicate and refined, without astringency commonly found in rosé wines.
