A popular Scottish breakfast staple, tattie scones are made with potato dough. This recipe gives instructions on making tattie scones with a dough made with potatoes, butter, flour, eggs, and salt and leavened with baking powder.

Ingredients

8 Servings

450g (1 lb) potatoes (peeled, cooked, and mashed)

30g (1 oz) butter, melted (plus more for greasing)

15g (1 tbsp) salt

125g (4 ½ oz) flour (plus extra for rolling)

1 medium egg

15g (1 tbsp) baking powder

Preparation

Step 1/7

Preheat the oven to 200°C (400°F), and prepare a large bowl.

Step 2/7

Fill the bowl with mashed potatoes, and gradually add the rest of the ingredients. Mix them thoroughly until a sticky, consistent dough is formed.

Step 3/7

Prepare a wooden board or a working surface, dusted with some flour. Place the dough on the dusted surface and roll it into a disk shape, about 1.5-2cm (½ inch) thick.

Step 4/7

Divide the disk into eight wedges.

Step 5/7

Place the triangles on a baking tray or greased cookie sheet.

Put in the oven and bake for 15 minutes until they rise and turn golden brown.

Let the scones cool down, then serve them warm with some butter added on top to accompany your breakfast.
