This is a traditional recipe made with polenta, cheese, butter, milk, water, salt, and black pepper.
250g (1 ¼ cups) polenta
80g (1⁄3 cups) Fontina cheese
80g (1⁄3 cups) butter
200 ml (3/4 cup + 4 tsp) milk
1 L (4 cups + tbsp + 2 tsp) water
salt, to taste
black pepper, to taste
Bring the water to the boil, then add salt.
Gently whisk in the polenta, then let the mixture simmer for 45 minutes while continuously stirring with a wooden spoon in order to remove any potential lumps. If the mixture starts clumping and becomes too thick, add some water until the texture becomes smooth again.
Cut the Fontina cheese into small cubes.
Add the milk into the polenta, stir, then add the cheese and butter and stir well again to combine everything.
Add some salt and black pepper to taste and serve the dish with a bit of melted butter on top.
