Piments ecrasés

Piments ecrasés is a traditional condiment originating from Mauritius. This chili paste is made with a combination of red or green chili peppers, onions, ginger, white vinegar, and vegetable oil. The chili peppers, ginger, and onions are blended into a smooth paste, then mixed with white vinegar.


If desired, the paste can be stir-fried in oil to dry out the moisture and prolong the shelf life. Once prepared, the chili paste is chilled, then served with most Mauritian meals. The name piments ecrasés means crushed chili in Mauritian Creole.


If you want to make piments ecrasés kid friendly and acceptable for people with lower heat tolerance, add some soaked raisins or muscovado sugar to the combination.
