Penovani khachapuri stands out with its light, flaky puff pastry, promising a crisp bite that contrasts beautifully with the gooey cheese filling. The blend of traditional Georgian cheeses, or their suggested alternatives, melds perfectly within this golden pocket, making it an irresistible treat. Because the recipe calls for ready-made puff pastry, these khachapuris are really quickly made. The recipe makes 10 delicious parcels.
1 kg unsweetened puff pastry, thawed
250 g of imeruli cheese, or bryndza cheese
250 g of sulguni cheese, or mozzarella
2 eggs
½ cup wheat flour
a bit of milk
After preheating the oven to 180-200 °C, mix one egg and grated cheeses, then divide the mixture into 10 portions.
Dust the working surface with some flour. Roll out the puff pastry, cut into 10 squares, and top them with some cheese filling. Fold the pastry into triangles or squares. Mix some milk with one egg and lightly brush the pastries.
Dust a baking tray with some flour, add the pastries, and bake for 20-30 minutes, until crunchy, puffed, and golden brown. Let cool for 15 minutes before serving.
