Patellette

Patellette is a traditional pasta variety originating from Teramo in Abruzzo. The pasta is made with a combination of durum-wheat flour, cornflour, water, and salt. The flours are vigorously kneaded for a long time with water and salt. The dough is rolled out into a thick sheet, and triangles are then cut out from the dough before they're boiled in salted water.


It's recommended to serve patellette with a soffrito of pancetta, tomatoes, and onions. Due to the fact that patellette pasta is usually served with a slightly watery and brothy condiment, the dish is typically eaten with a spoon.
