This recipe is a twist on the traditional porchetta panini. Apart from just porchetta and slices of bread, it also includes scamorza cheese, lettuce, and bourguignonne sauce.
2 slices of Tuscan bread (2 cm/1" thick)
4 slices of white scamorza cheese
60g (2 oz) porchetta, sliced
iceberg lettuce
bourguignonne sauce
salt
Place the scamorza cheese between two slices of bread, then toast the sandwich.
Once the cheese has turned stringy, lift one bread slice, then spread its underside with bourguignonne sauce.
On the other bread slice, place the porchetta slices and the iceberg lettuce, which you need to salt a bit.
Cover with the other slice of bread, bourguignonne sauce side down, and serve.
