Novac afumat din Ţara Bârsei

Novac afumat din Ţara Bârsei is smoked carp fish from the region of Ţara Bârsei. The fish are filleted, salted and smoked in a traditional way, using sawdust with a unique flavor of celery, at temperatures between 45-55°C and ventilated with the help of an air compressor.


After the smoking process, the fish are cleaned and lined with parchment paper. Golden yellow to brown in color and low in fat, Novac Afumat din Ţara Bârsei has a smoky, slightly salty taste. It does not have any unpleasant smells like saltwater fish because of the excellent water and planktons in the mountainous area where this carp lives.
