Nam chim kai is a traditional sweet chili sauce originating from Thailand. The sauce is usually made with a combination of fish sauce, garlic, chili flakes, lime juice, white wine vinegar, brown sugar, water, and rice wine. The ingredients are simmered in a saucepan until the sauce thickens and develops the consistency of runny syrup or honey.
