1 pound mozzarella
¾ cup all-purpose flour
3 large eggs
3 tbsp whole milk
2 cups panko (Japanese breadcrumbs)
1½ tsp garlic powder
1½ tsp onion powder
1 tsp dried basil
1 tsp dried oregano
1 tsp dried parsley
1 tsp dried thyme
vegetable oil (for frying; about 6 cups)
kosher salt
spicy marinara sauce (for serving)
Cut the mozzarella into 3x0.5-inch sticks.
Place the flour in one bowl, whisk the milk and the eggs in another bowl, and mix the panko, garlic powder, onion powder, basil, oregano, parsley, and thyme in a third bowl.
Dip each mozzarella stick first into the flour, then into the eggs and milk, and finally, into the seasoned panko. Coat the mozzarella sticks a second time, but this time skip the flour.
Arrange the mozzarella sticks on a wire rack placed inside a rimmed baking tray. Place the baking tray into the freezer for a minimum of one hour.
Fill a large pot with two inches of oil and fit it with a thermometer.
Place the pot over medium-high heat and heat the oil until it reaches 350°F.
Fry the mozzarella sticks in batches, for about 2 ½ minutes, until golden brown.
Place them on paper towels to drain, then while still hot, sprinkle with salt, and serve with the marinara sauce.
