Adapted from cuisineaz.com, this is a straightforward recipe for foie gras mousse. Pieces of foie gras are melted in whipped cream, and the mixture is then mixed twice, so it turns foamy. The resulting mousse is served in verrines, but any other glasses will do, and decorated with pieces of foie gras and berries.
200 g of foie gras
200 ml of whipping cream
salt and pepper, to taste
Dip the blade of the knife into hot water then cut the foie gras into cubes.
Pour the whipping cream into a saucepan, then add the foie gras pieces. Place over low heat and cook while continuously mixing, until the foie gras has melted. Once the foie gras has melted, season it with salt and pepper to taste.
Transfer the mixture to a food processor and mix until it is liquid but thick. Place the mixture in the refrigerator for two hours, then mix it once again, when it should turn foamy after several minutes.
Fill verrines about three-quarters full with the mousse. Decorate with pieces of foie gras and red berries and serve alongside bread or toasted bread.
