1 cup (125g) raspberries
1 cup (200g) vanilla coconut milk ice cream
1 tsp finely minced or grated fresh ginger
fresh raspberries, for garnish
Place raspberries to the blender and pulse briefly for a few times. Continue processing on medium high speed for about 30 seconds, until it reaches puree texture.
Next, add the coconut milk ice cream and the ginger, and blend until smooth.
