"The restaurant we went to was called Menya Shirakawa, and takayama ramen is exactly what they served. The soup broth is shoyu based and not too oily. It’s quite different from the traditional ramen as it is a little less rich, but it was delicious nonetheless and perfect as a midnight snack."
