Mathlotha is a variation of kabsa, a rice dish that is commonly consumed in the Gulf States of the Arabian Peninsula. It consists of three essential layers, namely a hearty wheat-based porridge with vegetables and meat (jareesh), shredded pieces of paper-thin flatbread (qursan), and basmati rice, while chunks of roasted meat (chicken, lamb, or other meat) are placed on top of the rice to crown the whole thing.
