"The sausage is one of my favorites, and this link was perfectly spiced. The casing had a great snap and bright green bits of jalapeno could be seen throughout. The thick layer of cracked pepper and the thicker smokering were all working together to create textural combinations not found in mortal brisket. Three of us sat there after many days on the road eating the best barbecue that Central Texas had to offer, and one simple word was repeated by all. Perfect!"
"The pit master tore off a big piece of wax paper, cut off a burnt end of brisket and tossed it on my paper, not saying a word. I ate it and immediately changed my order to include one pound of their incredible brisket, in addition to beef ribs and beef sausage, undoubtedly the best sausage I’ve ever tasted."

"The brisket, ringed with a finger-width coarse-pepper crust, was the Platonic ideal of the Central Texas meat-market style—the fat was rendered to perfection, and the smoke-infused meat was so tender that even the idea of a fork and knife seemed preposterous. Other meats shine as well. Pork ribs are solid; the all-beef sausage, which is made in-house, has a nice peppery flavor and a great snap. It consistently delivers some of the best barbecue the state has to offer."
