We strongly advise you to read the cooking tips before jumping to the recipe though

Introduction & history

This Swedish chocolate cake is incredibly easy to prepare, and the basic recipe requires no more than seven ingredients: butter, salt, sugar, cocoa, flour, eggs, and vanilla. Because the cake does not include any baking soda, it will have gooey insides, similar to that of a fudgy brownie. Sugar, salt, cocoa, and vanilla are added to melted butter, followed by flour and eggs. The resulting batter is poured into a buttered and floured cake pan and baked for approximately 20-30 minutes, depending on the recipe. Once baked, the cake is dusted with sugar or cocoa, and usually chilled, but can be eaten warm. Slices of kladdkaka are usually served with whipped cream, ice cream, or fruits like strawberries and raspberries.

Cooking tips

  • method

Although there is no significant difference in which order you combine the ingredients, recipes will differ in their method. Some add eggs last, some whisk them with sugar before they mix them with other ingredients, and some add cocoa to butter, and some to eggs, but basically, you can do no wrong. One thing to note, however. It’s important that you sift the flour before use and use a digital scale ... Read more
  • baking

It’s important that you avoid air ovens, as they will dry out the cake, which is counterintuitive to what you want to achieve — a gooey, sticky cake. The baking time is quite short, usually no more than 10-15 minutes, depending on the thickness of your cake; the thicker it is, the more time it will require. You will know the cake is baked to perfection, once it has set on top, but still has a sticky ... Read more
  • additional ingredients

Kladdkaka is a pretty simple cake, but you do not have to follow the basic recipe. You can replace the cocoa powder with chocolate, or enrichen it by adding various nuts, pieces of chocolate, or flavorings like orange zest.
  • serving

Because it is so dense with cocoa, kladdkaka is sprinkled with powdered sugar before serving. And although it can be eaten piping hot, it should be chilled in the refrigerator for a few hours. For serving, it is usually cut into slices and paired with whipped cream, ice cream, or various fruits like strawberries and raspberries.
