Introduction & history

Shavings of simmered roast beef tucked in a long Italian roll, and served a jus, meaning with gravy — that, in short, is Italian beef, a sandwich native to Chicago. The preparation starts with wet roasting a hunk of beef which is rubbed in aromatics like garlic, oregano, and red pepper flakes. When the meat is done it is refrigerated together with the filtered broth overnight — some recipes even suggest freezing the meat for easier slicing. The following day, the broth is simmered until reduced, and the meat is sliced thinly, against the grain, then placed in the broth to heat through and soften some more. Italian or French bread roll —most commonly Turano or Gonnella French roll — is sliced open on one side, and stuffed with heaps of beef slices, and topped with sautéed green Italian sweet peppers and Chicago-style giardiniera, a spicy vegetable relish.
