Introduction & history

The raw Yakutian salad, Indigirka, is made with only a few ingredients: whitefish, oil, salt, and pepper. The preferred types of fish are all present in the region, such as broad whitefish or chir, muskun, nelma, peled, vendace, and omul. The fish is frozen prior to preparation, then peeled, fileted, and cubed. The cubes of fish are mixed with cubed onions and seasoned with oil, salt, and pepper. But for special occasions, fish roe is often added to the mix. The salad is often garnished with lemon wedges and parsley sprigs and kept in the freezer until serving, so the fish doesn’t thaw out.
