"Fill out an order form to indicate exactly how you like it, from the amount of shredded garlic to the fat content (locals go for more fat to get that sweet flavor they adore). The noodles taste best when ordered slightly chewy, and the soup is flavorful even with a light fat content. There a several branches, including one in the basement of the Hakata Station, but the best one is in Canal City."

"It was not in my "must-try" list but boy was I so happy that we stumpled upon it. It is arguably the BEST RAMEN I've ever had. The broth is rich but not overpowering. It does not leave you with that heavy oily feeling which I experience with a lot of ramen. Their homemade fresh noodles are made from their unique blend of flour which is then cooked in special filtered water which gives it an added flavor. Osukaran vinegar, I believe this is the biggest differentiating factor. This option is unique ... Read more

"This is ramen at its heaviest and heartiest."

"the Canal City location is the only one to feature the black coffin-like bowls, otherwise known as "Juubako." The very smooth tonkotsu soup takes on a tangy, yet spicy, flavor when mixed with the special red sauce. It's to die for, hence the coffin-like bowls (I made that up). So the next time you're searching for ramen in Hakata's Canal City, try not to overlook the first floor."

"I’ve heard that the ramen at Ichiran is among the best in Fukuoka and that it had a unique eating experience. I was desperate to try it. The egg might have been soaked in brine for ages because even without salt, the egg was cooked perfectly and was really tasty. I asked for a regular amount of spice to be added, but it was pretty hot. The soup was tonkatsu based and incredibly tasty."

"I ordered my ramen rich and oily with soft noodles and it was spectacular. Extremely flavorful (because I ordered it that way) and a small dollop of Ichrian's special chili sauce gives it a nice kick. A fitting cap to my gastronomical tour around Japan."

"The Hakata ramen (speciality of this city) was perfect - the broth was rich and highly concentrated with tender slices of pork belly and a perfectly soft boiled egg to accompany the silky noodles."

"My ramen finally came and I had no complaints! It was delicious and filling. Was warm enough, too, to chase away the Fall coldness of Fukuoka. Best of all, I got to enjoy this ramen with friends in such a novel environment. Definitely one for the books!"

"I tried the soup without mixing the secret sauce with the soup, the natural pork broth was absolutely delicious, so thick and creamy and sweet. But the best part was the red sauce which occupies the center of the ramen, after mixing the secret sauce with the soup, the spices of the sauce added so much flavour to the soup and it was so good that I drained the bowl empty. The handmade noodles complemented the pork broth very well, the noodle’s texture was firm which was how I liked it to be done.... Read more
