The bean sprouts are typically served on the side, but are really an essential part of the dish, and should always be added. Of course, quality oysters must be used. River Curve in Pakchong serves a very good example of this dish. Do not rate this dish based on some soggy, low-quality, cheap, street vendor offering. That would not be a suitable example of the potential of this absolutely fantastic dish and would not do it anywhere even close to justice.
