GREEN LAYER
50g rice flour
40g sugar
75ml water
1-3 tbsp matcha powder, to taste
WHITE LAYER
50g rice flour
40g sugar
75ml water
PINK LAYER
50g rice flour
40g sugar
75ml water
red food colouring, as needed to achieve desired colour
potato starch powder, for dusting
Mix all the ingredients for the green layer in a microwave-safe bowl, so the mixture is lump-free.
Loosely cover the bowl with plastic wrap and microwave on high for two minutes.
Take the bowl out of the microwave and stir the mixture with a wet spatula.
Then, cover it with cling film loosely again, and microwave now for one minute and stir the mixture with a wet spatula again.
Lightly dust an 8x8-inch baking tray with potato starch powder.
Then, pour the green mochi into the baking tray, taking care that it's evenly spread — you can use a rolling pin to help the layer achieve the same thickness.
Repeat the same process with the remaining two layers, first the white and then the pink one.
Once you have all three layers stacked on one another, dust the top with potato starch powder.
Let the mochi rest for half an hour, cut into either the traditional diamond-shaped pieces or into squares.
Serve with hina arare rice crackers or matcha tea.
