"The original and simply the best hard cheese there is. Made from unpasteurised milk and often from high altitude pastures this cheese is as tasty as versatile. Mover over everything else ;-) PS my top rated Gruyere (as there are many sub varieties) is the 18 months matured Rolf Beeler Gruyère AOP."

"By far my most favorite cheese, the more months the better. If you try it, get a 8+ months cheese. It's also great for Cheese-Spätzle and similiar things."
