The following recipe explains the method of making a simple, yet luscious almond granita, which can be made with whole almonds for a coarser texture, or with almond paste for a smoother one. This version of granita is best when accompanied by a hot brioche.
1 l water
250 g blanched almonds
130 g sugar
Blanche the almonds by soaking them shortly in boiling water, and removing their peel.
Place the almonds and sugar in a food processor and run it at maximum speed shortly, so the almonds release their oil.
Mix the processed almonds with boiled water and transfer this mixture into a container. Cover with a lid and place into a freezer. Stir from time to time until it freezes completely. Alternatively, you can prepare granita in an ice-cream machine – run it for 30 minutes.
Right before serving mix the granita and transfer it into serving glasses.
