The following recipe is for a Gatsby sandwich consisting of an Italian roll stuffed with fried boloney, thick-cut French fries, piri-piri sauce, ketchup, and shredded iceberg lettuce. You can stay faithful to this version or modify the ingredients to fit your taste, but to qualify as a Gatsby, make sure you don't exclude the fries and the hot sauce.

1 tbsp canola oil

6 slices bologna

1 (8″/20 cm) crusty Italian roll, toasted

2 cups (120g) cooked thick-cut French fries

1⁄3 cup (80g) ketchup

piri-piri sauce, to taste

1⁄2 cup (35g) shredded iceberg lettuce

Step 1/3

The first step is to prepare bologna. In a 10-inch (25 cm) skillet, heat oil over medium-high heat, and cook the bologna slices on each side for 1-2 minutes until browned.

Step 2/3

Slice the roll crosswise, arrange the fried bologna on the bottom half, and then cover with the additional toppings of fries, ketchup, piri-piri, and lettuce.

Step 3/3

Finish by covering with the top half of the roll.
