1 cup cooked rice
1 cup cooked red or black beans
3 tbsp red bell peppers, chopped
3 tbsp onion, chopped
2 tbsp celery, chopped
1 tsp vegetable oil
OPTIONAL INGREDIENTS
1 pork sausage, minced
3 slices of ham, chopped in small pieces
scrambled eggs
Chop the bell peppers, onion, and celery. Heat the oil in a frying pan and lightly fry the vegetables.
If you like, add sausages or ham and stir.
Add the cooked rice and beans and stir well, so the flavors come together.
Cover with a lid and leave to rest for a couple of minutes before serving. If desired, add some scrambled eggs on the side.
