"What to Eat: Fried Mormon Funeral Potatoes."
"You’ve got hash-browned potatoes, mushroom creme, baked in a skillet with pickled scallions – and then, then you add corn flakes? Brilliant! Creamy, salty, crunchy, I’ll take it!"
"Stop by Pork Belly’s Eatery to try an order!"
"My favorite funeral potatoes. They were comforting and creative, but not overly heavy. The shredded potatoes were mixed with white cheddar, gruyere and golden Velveeta cheese, chives, onions and heavy cream. The dish was topped with cornflakes, smoked cheddar and a sweet housemade bacon jam before heading into the oven to crisp up. Garnished with ribbons of scallions, the ooey-gooey, multi-cheese dish is fantastic alone, but the bacon jam takes it next level."
"For a more traditional take on funeral potatoes, I'm a fan of the way Wasatch Brewery treats the dish. Though it's only available on their brunch menu, they serve up king-sized scoops of buttery mashed potatoes topped with a generous helping of cheddar cheese and topped with crispy cornflakes. It's got the classic look of something you'd find at a ward potluck, but it tastes like a slice of gastropub flavor."
