Écume de Wimereux à la Truffe de la Saint-Jean is a seasonal variation of the traditional Écume de Wimereux cheese, enriched with summer truffles (Tuber aestivum), known as "truffe de la Saint-Jean." This cheese is produced by Fromagerie Sainte Godeleine, located on the Côte d’Opale in France. Écume de Wimereux is made from raw cow's milk sourced from local farms.


After the addition of cream, the cheese is hand-shaped in the workshop of Fromagerie Sainte Godeleine. During the aging process, which lasts two to three weeks, a thin white rind with a fine velvety layer develops. In addition to the version with summer truffles, a variant with wild garlic (ail des ours) is also available, depending on the season.
