Introduction & history

A French roll stuffed with roast beef either dipped into or served with a side of au jus — that is, in short, the description of the French Dip sandwich. The preparation begins with roasting beef, either rib eye, sirloin, tenderloin, or chuck. When done, the meat is first rested for 15 minutes, then carved into slices. The meat drippings are then combined with beef broth and seasonings such as pepper, but depending on the recipe, additional herbs and seasonings like bay leaves, Worcestershire sauce, red wine, and even soy sauce can be included as well. The beef slices are shortly dipped in the au jus sauce, then placed on a split open French roll. Cooking tips

    Because the bread must hold shape when dipped into au jus, look for bread that is not overly soft and not overly crusty, such as baguette and French rolls.
  • au jus

    Although not a must, many chefs advise that au jus be prepared separately from the meat, as cooking them together will make the sauce cloudy. Also, besides just pepper, you can add a host of other herbs and aromatics, such as Worchestshire sauce, bay leaves, soy sauce, and red wine.

    To get more crunch, you can grill or bake the bread beforehand, then start assembling the sandwich. If you’re adding cheese to the sandwich, it is advisable to bake the assembled sandwich in the oven for a few minutes, so the cheese melts.
  • alternatives & additional ingredients

    Apart from beef, you can use other kinds of meat, either pork, lamb, or turkey. Also, to cut on time, you can use store-bought roast beef. Additional ingredients include mayonnaise, provolone or Swiss cheese, mustard, horseradish, and caramelized onions.

The main advantage of this recipe is that it can be prepared in under 30 minutes due to the fact that store-bought slices of roast beef are used. The one thing that needs to be cooked is the dipping sauce, which is rich with flavors of sherry, consomme, and shallot. The meat is shortly dipped into the juice and tucked into split-open torpedo rolls. 2 tbsp butter

1 shallot, chopped

1 tbsp all-purpose flour

1 jigger dry sherry, optional

2 cans beef consomme, found on broth and soups aisle or beef broth

1 ½ pounds deli sliced roast beef

grill seasoning blend for steak, or, coarse salt and pepper

4 torpedo sandwich rolls, split

Step 1/5

Sauté shallots in melted butter over medium heat for two minutes, then add the flour and cook for one more minute.

Pour in the sherry and cook until it evaporates. Next, slowly pour in the consomme. Bring the sauce to a boil, then reduce the heat until simmering.

Season the meat with either grill seasoning or salt and pepper.

Split open the torpedo rolls. Dip the meat shortly into the au jus, then place inside the rolls.

Step 5/5

Serve the sandwiches on individual plates, with a bowl of au jus sauce on the side.
