2 tbsp olive oil
2 pound chuck roast
1 onion, sliced
1 can French onion soup
2 cups beef broth
2 tbsp Worcestershire sauce
1/2 tsp salt
1 tsp pepper
1 tsp garlic powder
6 French rolls
6 slices provolone cheese
First, rub the roast with salt, pepper, and garlic powder.
Sear the roast in olive oil over medium-high heat. When seared on all sides, transfer to a plate.
Sauté the onions in the leftover fat until softened.
Add the roast to the crockpot with onions, then pour in the broth, the soup, and add Worcestershire sauce.
Cook in a crockpot on low for 6-8 hours until tender.
Take the meat out of the crockpot and slice it or shred it. Filter the liquid.
Assemble the sandwiches. Split the rolls in half, then fill them with the meat and the cheese.
Serve on individual plates with a bowl of au jus on the side.
