Fortsonia

Fortsonia is an American cow's milk cheese produced in Georgia by Nature's Harmony Farm. This Alpine-style cheese that's inspired by Comté and Gruyère has a natural rind and yellow color. Its texture is firm and dense.


The aromas are rich, while the flavors are nutty, sweet, and caramel-like. The longer the cheese ages, the more complex and nutty flavors it develops. Fortsonia comes in several variations: Standard (aged 6 months or less), Fortsonia Reserve (10 months or more), and Twisted Fortsonia (washed by hand in Scuppernong wine and aged for 4 months).


Due to its sweet and nutty flavors, it's recommended to pair Fortsonia with Sauvignon Blanc, Zinfandel, Syrah, and Chardonnay. Many claim that Fortsonia makes a great grilled cheese sandwich, so make sure to put those claims to the test.
