Finca El Injerto Pacamara is a premium coffee originating from the renowned El Injerto farm, located in the mountainous Huehuetenango region of Guatemala, at an altitude of 1,720 meters. This variety is the result of a cross between Pacas and Maragogipe, producing large beans and a unique flavor profile.
Pacamara is distinguished by its citrusy mandarin acidity, with pronounced notes of tropical fruits such as peach and pineapple. The long-lasting aftertaste provides a unique experience on the palate, with layered and complex aromas. The production process of this coffee includes hand-picking during February and March, wet processing with a 24-hour soak in spring water to enhance cup quality, and sun-drying on African beds.
Finca El Injerto is one of the most esteemed coffee plantations in Guatemala, renowned for its exceptional quality and commitment to sustainable production. Nestled in the mountainous region of Huehuetenango, this family-owned farm boasts a legacy spanning more than a century.
Founded in 1874, the farm initially cultivated sugarcane and other agricultural crops, but in the early 20th century, it fully dedicated itself to coffee production. The name El Injerto originates from a native fruit found in this region, symbolizing the farm’s deep connection to nature and the uniqueness of its terroir.
