The yeast dough must be well made, I love making it like a brioche, first mixing the flour, yeast and liquid, kneading it well to form the gluten and only then adding egg yolks, kneading it, and then adding the butter (fat inhibits the gluten formation), this makes the dough buttery wonderful. The filling can be adjusted to one's own preference, but important to taste it before adding it to the dough. Best is when each filling is separated by blinis/crepes."
